YAM ‘FISH’ CURRY


Ingredients

  1. ½ kg yam, peeled, steamed, and cut into thin squares
  2. 1 tsp turmeric
  3. salt to taste
  4. ¼ cup grated fresh coconut
  5. 3 pieces of kokum
  6. few curry leaves for garnish

 

Masala

  1. 1 tsp methi seeds
  2. 1 cup onion, sliced
  3. 2 tbsp ginger, minced
  4. 1 tsp garlic, minced
  5. 4 to 5 Kashmiri chili
  6. 1 tsp mustard seeds
  7. 5-6 curry leaves

 

Method

Roast these masala ingredients. Blend the roasted masala and fresh coconut together.

Add the steamed yam into a vessel, add turmeric, salt, masala paste, and kokum, add enough water and let it boil. Switch off the gas. Add curry leaves as garnish and

serve.

Ingredients

  1. 1 cup vegetable stock
  2. 2 cups cooked barnyard/foxtail millet
  3. ½ cup broccoli
  4. ½ cup potato, unpeeled, diced
  5. 1 medium onion, diced
  6. 2 cloves garlic, minced
  7. 1 tbsp fresh thyme leaves (or 1 tsp dried)
  8. 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
  9. ¼ tsp crushed red chili fakes
  10. 1.5 cups spinach leaves
  11. 1 cup cashew cheese
  12. 1 tsp fresh lemon zest
  13. ¼ tsp freshly ground black pepper
  14. Salt to taste

 

Method

Steam the potato until cooked. Preheat the oven to 350 degrees. Dry roast the onion and garlic until translucent. Add thyme, rosemary, red pepper flakes, and spinach and sauté until just wilted.
